Luscious Green Dressing

Slightly sweet yet tangy- bursting with flavor!

Makes 2 cups

Preparation time: 10 minutes



Blend in a blender:

    • 1 cup olive oil
    • ½ cup cider vinegar
    • 1 cup chopped parsley (remove stems)
    • 1 small green onion, chopped
    • 2 tablespoons peeled and grated ginger root
    • 1/3 cup honey
    • 1/8 tsp basil
    • ¼ rounded tsp curry powder
    • ¼ tsp dry mustard
  • 1/8 tsp salt
  • Pinch of black pepper

This wonderful salad dressing is popular both here and at Ananda’s main retreat, The Expanding Light. It’s also great on steamed vegetables, cooked grains, and beans.

Makes 2 cups

Preparation time: 10 minutes

Combine in a bowl:

  • 2 cups sunflower or olive oil
  • 1/4- 1/2 cup tamari or Braggs Liquid Aminos (start with lesser amount)
  • 2 tsp ground coriander
  • 2 tsp powdered ginger
  • 2 tsp powdered cumin
  • 2 tsp dried basil
  • 2 tsp dried dill weed
  • 1 ½ tsp onion powder
  • 4 tsp prepared Dijon mustard

Stir well, or pour into a blender and mix on low speed for one minute.

(If using olive oil, this dressing may harden when refrigerated. Should this occur, place the container in hot water for a few minutes before serving.)
