Healthy Flavor filled Salad dressings

A favorite at both The Expanding Light Retreat and Seclusion Center, this versatile dressing is also wonderful on steamed vegetables, cooked grains, and beans.

Luscious Green Dressing

Slightly sweet yet tangy and bursting with flavor, this vibrant dressing comes from the classic Ananda cookbook Simply Vegetarian by Crystal Clarity Publishers—a longtime favorite in Ananda kitchens.

Makes 2 cups

Preparation time: 10 minutes

Blend in a blender:

    • 1 cup olive oil
    • ½ cup cider vinegar
    • 1 cup chopped parsley (remove stems)
    • 1 small green onion, chopped
    • 2 tablespoons peeled and grated ginger root
    • 1/3 cup honey
    • 1/8 tsp basil
    • ¼ rounded tsp curry powder
    • ¼ tsp dry mustard
  • 1/8 tsp salt
  • Pinch of black pepper

Makes 2 cups

Preparation time: 10 minutes

Combine in a bowl:

  • 2 cups sunflower or olive oil
  • 1/4- 1/2 cup tamari or Braggs Liquid Aminos (start with lesser amount)
  • 2 tsp ground coriander
  • 2 tsp powdered ginger
  • 2 tsp powdered cumin
  • 2 tsp dried basil
  • 2 tsp dried dill weed
  • 1 ½ tsp onion powder
  • 4 tsp prepared Dijon mustard

Stir well, or pour into a blender and mix on low speed for one minute.

(If using olive oil, this dressing may harden when refrigerated. Should this occur, place the container in hot water for a few minutes before serving.)
