Summer Burgers

A longtime favorite in Ananda kitchens, these summer burgers are often requested by guests. Light yet satisfying, they offer a flavorful vegetarian alternative to hamburgers and are especially enjoyed during warm-weather meals and seasonal gatherings.

Makes 7 patties

Preparation time: 30 minute (less if you use a food processor)

Baking time: 35 minutes

Mix together:

1 ½ cups ground sunflower seeds (ground to a fine meal)
½ cup finely grated carrots
½ cup fine chopped celery
6 tablespoons minced onions
2 tablespoons minced fresh parsley
2 eggs
1 teaspoon basil
2 tablespoons tamari
2 tablespoons melted butter (can substitute olive oil for a dairy-free option)
1 teaspoon garlic powder

Mix well then form patties and place on well oiled baking sheet. Bake at 375 degrees for 20 minutes on one side and 10-15 on the other side. Both sides should be a golden brown color. Serve on buns like hamburgers, or wrap-style- on a large leaf of lettuce with avocado, tomatoes or other creative toppings.
